Sterling SilverŪ Flank Steak Souvlaki Salad |
Preparation Time: 24-25 hoursCook Time: 8-10 minutes Difficulty: Moderately Difficult Serves 4 INGREDIENTS 1-1/2 lbs Sterling SilverŪ Flank Steak, trimmed of fat 3 T olive oil Juice and zest of 1 large lemon 3 cloves garlic, minced fine 1 tsp freshly ground black pepper 2 tsp fresh oregano leaves, minced, or 1 tsp dried, crumbled 1-1/2 tsp salt SALAD 8 cups mixed salad greens, washed and dried 1/2 large cucumber, peeled and sliced thin 1 pint grape tomatoes, halved 1/2 small red onion, sliced very thin 4 oz feta cheese, crumbled 1/2 cup Kalamata olives DRESSING 1/2 cup low-fat yogurt 1/2 large cucumber, peeled and cut into chunks 1 large clove garlic, peeled Juice of 1 lemon 1/2 tsp dried dill Salt and pepper, to taste METHOD Combine olive oil, lemon juice and zest, garlic, oregano, salt and pepper in a glass baking dish. Place steak in the dish and marinate in the refrigerator for up to 24 hours, turning once. Remove from marinade and drain. Discard marinade. Grill steak, either on a grill press or outdoors, for 4 to 5 minutes per side (for medium-rare), or to desired doneness. Remove from grill and let rest 10 minutes. Slice thinly across the grain to serve. Combine salad ingredients in a large bowl. Combine all dressing ingredients in a food processor or blender and blend until smooth. Season with salt and pepper. Toss with the salad or drizzle over the top. |
